Ingredients

2bananas
2eggs
½ cupcoconut sugar
1 teaspoonvanilla
1 cupblanched almond flour
3 teaspoonscinnamon
2 teaspoonsbaking powder
¼ teaspoonbaking soda
½ teaspoonsea salt
1 ½ cupgrain free granola
2 tablespoonsvanilla ghee
or butter if preferred
Instructions
Step 1
Preheat oven to 350F.
Step 2
Mash your bananas in a large bowl.
Step 3
Add the eggs, coconut sugar, and vanilla.
Step 4
Whisk everything together until combined.
Step 5
Add the almond flour, 2 teaspoons of the cinnamon, baking powder, baking soda, and sea salt.
Step 6
Whisk again until all combined.
Step 7
Finally, fold in 1 cup of the granola.
Step 8
Line your muffin tins and scoop the batter in until almost full.
Step 9
In a separate bowl, stir together the rest of the granola, melted vanilla ghee, and 1 teaspoon of cinnamon.
Step 10
Top the muffins with this mixture and bake for 20 minutes.
