Chocolate Zucchini Bread

This was delicious! When I'm in the mood for chocolate & have zucchini, I will make again.

Does not need icing, very decadent and rich.

Didn't have the chocolate chips, but still turned out great. I used half butter and half coconut oil. This isn't super sweet, but it was a tasty treat and a way to use up zucchini. My 6 year old didn't notice the secret ingredient.

So so good! Couldn't even tell theres zucchini in there. Though if you have picky eaters make sure to shred the zucchini really small as to not see it on the top. Also be sure to squeeze out the zucchini to get the majority of the moisture out as if you dont the bread will be soggy.

I added a scoop each of pureed roasted sweet potatoes and butternut squash. Needs a tad more oil or something, but this bread is delicious, definitely very similar to chocolate cake.

Delicious! I used Ghirardelli dutch process cocoa powder and it had a deep dark chocolate taste. Added dark chocolate chunks as well. My 10 year old loved it!

SO SO good. This was my first time ever having zucchini bread and idk if I’ll make it any other way. It’s like eating cake for breakfast and I’m here for it.

Definitely tastes more like cake than bread. Very rich and chocolatey and moist, can’t even tell there’s zucchini, (except for an occasional zucchini strand). We used aquafaba instead of egg so it turned into crumble when we cut it, but still super delicious! Honestly it was richer than I wanted, but as long as you’re expecting chocolate cake you can’t go wrong with this recipe.

Super yummy and a great way to use left over zucchini.
