Air Fryer Rolled Chicken and Cheese Katsu

Ingredients
2 servings
8 ozdeli chicken breast
2 ozpart skim mozzarella string cheese
2 Tbspall-purpose flour
salt
to taste
pepper
to taste
1egg
beaten
¼ cuppanko breadcrumbs
cooking spray
tonkatsu sauce
for dipping, optional
Instructions
Step 1
On a flat surface, layer two slices of deli chicken breast. Place a cheese stick (sliced in half the long way) at one end of the slices and roll into a long cylinder. Secure with a toothpick. Repeat with three more rolls.
Step 2
In three separate shallow bowls, add the all-purpose flour, the beaten eggs and the panko. Add salt and pepper to the flour and gently mix together.
Step 3
Coat the rolled chicken and cheese pieces in a layer of flour. Pat off the excess, then coat in the beaten egg. Let the excess egg drip off, then coat in the panko. Gently press the panko into each roll.
Step 4
Preheat your air fryer for 400 degrees Fahrenheit. Use cooking spray to lightly coat each roll on all sides. Add the rolls to the air fryer basket in a single layer and air fry for 6-8 minutes, flipping halfway, or until your rolls are a light golden brown color.
Step 5
Remove from the air fryer and cut in half. Serve with tonkatsu sauce or Japanese curry and white rice.
