Israeli Chicken Sofrito

I only used the ingredients and put it together by placing sliced vegetables on the bottom of the pan, placed the chicken on top and sprinkled generously with the seasonings, except for chicken stock. Covered and baked. Baked uncovered at the end to brown for about 20 minutes.
