2 Tbspolive oil

8 ozpasta

⅛ cupFresh Parsley

Instructions

Step 1

Preheat oven to 400 degrees.

Step 2

In an oven proof baking dish, add the tomatoes, shallot, garlic, seasonings, and olive oil. Mix everything together well. In the center, add the block of Boursin cheese.

Step 3

Bake for about 40 minutes or until the tomatoes start to burst.

Step 4

Meanwhile, cook pasta according to package instructions. Reserve about 1/2 a cup of pasta water.

Step 5

Remove the baking dish from the oven and stir everything together well to form a sauce. Add the cooked pasta and pasta water as needed until everything is thoroughly coated. Sprinkle the fresh parsley on top to serve.
