One Pan Sundried Tomato & Boursin Cheese Orzo

This creamy sundried tomato orzo all cooks in one pan and is so flavorful. It pairs perfectly with my air fryer parmesan crusted chicken recipe.

Ingredients
4 servings
1 TbspOil
from Sun-Dried Tomatoes, can also use olive oil
1shallot
minced
4cloves garlic
minced
1 ½ cupsOrzo
dry
4 ozSun-Dried Tomatoes
I used about half a jar of the sundried tomatoes in olive oil from
3 cupsChicken Broth
use more if necessary
1 tspRed Pepper Flakes
use less based on spice preference
salt
to taste
pepper
to taste
1Lemon
divided
3 ozbaby spinach
2.6 ozGarlic & Herb Boursin Cheese
I used half the container of cheese, cut into a few pieces
Parmesan Cheese
freshly grated, to serve
Fresh Parsley
roughly chopped, to serve

Instructions
Step 1
Heat oil from sundried tomatoes in a large sauté pan over medium heat. Add minced shallot and cook for 2 minutes, stirring occasionally. Add minced garlic and cook 1 minute, stirring often. Add orzo, stir to combine, and toast for 1-2 minutes.
Step 2
Add sundried tomatoes and stir to combine. Pour in chicken broth. Season with red pepper flakes, salt, and pepper. Bring to a boil then turn heat to medium low to simmer. Cook for about 10-15 minutes until liquid is mostly absorbed and orzo is cooked through. Stir occasionally so orzo doesn't stick to the bottom of the pan. Add more chicken broth if necessary.
Step 3
Once orzo is cooked, turn the heat to low. Add the juice of half a lemon and baby spinach. Stir to combine and let the spinach wilt. Add Boursin cheese and stir well to combine until cheese is melted.
Step 4
Serve immediately with additional lemon juice, parmesan cheese, and fresh parsley. Add sliced air fryer parmesan crusted chicken if desired.
