Instant Pot Kale Potato Soup

It's a really poor mix of spices and veggies. And the kale doesn't really fit. Needed some spicing up to make it pass.

So healthy it can use a little kick.

Don't have an instant pot, made it on the stove top with immersion blender. It was a little on the bland side for my liking with just the seasonings listed. I added smoked paprika, nutritional yeast, granulated onion flakes and garlic powder. Also it's easy to throw in some canned chicken and the leaves from the celery stalks if desired.

Add heavy cream instead of half and half

Immersion blender blended more than intended but still good Added a can of white beans which made it creamer

I added a leek to it, just because I had one that I needed to use.

This was a good classic potato soup. I actually made it on the stove... I forgot the kale. Which made my husband and kids happy. Added a dash of almond milk and the tiniest bit of shredded cheese. Just mashed it with a potato masher because it's what I had. I used petite potatoes of different varieties. Photo is before using the potato masher.

Added ham. Split the broth 50/50 low sodium vegetable and low sodium chicken. Blended half the veggies. Remaining potatoes were too soft/mushy.

It's an ok soup, but it's missing some creaminess and fat.

Didn't use parsley (didn't have), lemon (forgot), and celery (don't like). Used chicken bullion concentrate instead and an extra cup or so of water to get the thickness I wanted. Used 1tsp thyme and pepper to match oregano . Will add more dried herbs next time. Only added salt near the end. Will massage kale before adding to soup next time for softness.

Disappointing. Very bland, and the texture was gluey instead of creamy.

Think it will be nicer with less carrots, but not bad overall!

It's a little on the sweet side but good

Super nice. Used mushroom stock instead of vegetable stock, made it creamier with almond milk and used an immersion blender to partially blend it.

The taste was nice but the consistency definitely not like the pictures, I will probably need to make it with more water. Also the kale suggested was too much

Made it on the stove. Tastes fine but nothing special. Probably would be better if the whole thing was blended.

Less broth next time. Replaced half of celery with leaks. Added "thanksgiving seasoning" instead of salt Saute kale before serving. Three bey leaves Green onions and sour cream to finish

Best if blended. Could maybe use some blended cashews or something to make it creamier

The base was pretty dang good. I love the kale and potatoes together! We ended up putting pickle juice instead of lemon juice since we didn’t have any lemons on hand. Also added some bacon, fried up spam cubes (judge me if you want, it was good) green onions and sour cream as toppers.

Really simple and tasty! We added turkey for some protein.

-Double recipe for 11-12 servings. -Add chicken sausage, 5-10 links. -1.5x Kale, extra broth, add after blended part is removed. -2 hrs total time.

This hit the spot.

Delicious yet simple winter warmer

I did it on the stovetop and skipped the blender. Just used corn starch to thicken the soup, and it turned out delicious! Easy to scale up if you want leftovers, too. This one would be good with leeks as well, if you add them at the same time as the carrots.

I would saute the kale before adding. Otherwise, autumn in a bowl!

Oh my oh my. unbelievable. I used little Yukon potatoes (skin on) and added a bit of cheese (non-vegan, sorry). this was phenomenal.

Add some more oregano/thyme and parsley for extra taste as well as salt and pepper after cooking.
