Instructions
Step 1
Rinse a cup of red lentils.
Step 2
Soak for 6 hours to overnight.
Step 3
Drain and rinse until the water runs clear.
Step 4
Add to a blender with 1 tsp of salt and 1 cup of fresh water. Blend on high speed until perfectly smooth.
Step 5
Heat a pan on medium heat with a little bit of olive oil. Pour about ½ a cup of batter at a time, cooking until the bottom gets a light brown colour (around 1 minute for me). Flip and cook for another minute.
Step 6
To serve: in the video, I am using hummus, roasted veggies (red onions, cauliflower, pumpkin, carrots) spiced with curry powder, baby spinach, and sauerkraut. So delicious!
