Lemony Artichoke and Quinoa Salad

Fresh, quick, still good as leftovers. I added air-fried courgette and asparagus. Could not find tinned artichoke hearts in the UK so just used the antipasti jarred variety.

I added Dijon mustard to the dressing, more of a vinegarette with sun dried tomatoes and added basil. This made enough for 4.5 lunches! Also serving with arugula and cucumbers to be even more filling with green stuff 💚

Really enjoyed. Did 60g dry quinoa per person but kept the rest of the 4 person recipe for two. Very fresh. Used basil not parsley.

Delicious, although I served it hot! Thinking next time I'll use farrow instead of quinoa bc I can be picky about texture. Will definitely add into my dinner rotation.

Doubled the minced garlic, added vegan feta on top, and added extra salt. Very flavorful dish that was neither bland or overly acidic per other reviews 🤷‍♀️

I took the shortcut of prepping my quinoa ahead of time so I didn't have to wait for it to cool. Added pepitas for a little additional savor and crunch, but other than that stuck to the recipe. This is a very fresh-flavored, bold salad and I'd serve it to anyone. Non-vegans might enjoy some crumbled feta on it instead of pepitas.

For me, way too acidic and bland.
