15 min Chickpea Quinoa Salad with cumin tahini dressing
I make this salad all the time because it's just so easy and delicious and it only takes 15 minutes to put together! Vegan and gluten free and made using all wholes food ingredients!

drained and rinsed
1 cuptomato
diced
1 cupcucumber
diced
½ cupred onion
finely diced
1 cupquinoa
cooked, I used tricolor cooked and veggie broth
⅓ cupparsley
minced
0.5avocado
diced
¼ cuproasted pistachios
sub walnuts
Tahini Cumin Dressing
Instructions
Step 1
Add all salad ingredients to a large bowl.
Step 2
In a small bowl, add all dressing ingredients and whisk or mix together until smooth and top on the salad and mix until well combined. Enjoy!
