Crazy Good Street Corn Chicken Tacos

The title says it all really! These were excellent, if a little messy to eat. The chicken was lightly spicy and very flavourful, and the corn salsa was amazing. I had to skip the cashew cream due to family allergies, but the avocado lime sauce recommended was also superb. This is a fantastic summertime dish, well worth the fuss.

Pretty good, I really liked the marinate on the chicken and the roasted corn turned out great. For me, the cashew sauce was a bit of a miss, my blender struggled to make it smooth and it lacked flavor. I think I might add some hot sauce or hotter peppers for more heat next time.

This will be one of our go-to taco recipes from now on - seriously so good! The cashew sauce was so rich and creamy and the spice blend on the chicken was perfect. We also added some habanero hot sauce (not pictured) because we love spice 😋

This was a favorite of my family and clients. Don’t skip the cashew cream sauce (awesome!) skip the jalapeño in the cream sauce if you don’t like spice and just add jalapeños to the the tacos for those who like spice. Definitely a keeper.
