20dried Kashmiri red chilies
soaked in vinegar + 1/4 cup hot water for 10 mins, or use 1 1/4 tbsp Indian chili powder

malt/goan/red wine/ apple cider

10garlic cloves
or 2 tablespoons fine grated

1.5 inchginger
or 2 tablespoons fine grated
2 lbsskinless bone-in chicken
or 1 1/2 lbs boneless chicken

½ teaspoonturmeric

¾ teaspoonsea salt

3 tablespoonsoil
I use coconut oil

2 cupsonions
2 medium, fine chopped or processed

2tomatoes
small, optional, pureed

1 teaspoonsugar
optional
