Peach Chipotle Salsa Chicken

This was tasty! I used mango instead of peaches because the store was out. Also added grilled red onion, yellow and red pepper. Served over a bed of long grain brown rice. Was a nice change of pace to begin the warm weather season.

I made the other night for dinner and it’s a great recipe! I used chicken thighs for flavor and the peach salsa was super nice. I added ancho chili powder also to my spice blend. It’s a healthy dish and it’s a good dish! If I took better pictures lol, this would come out brighter, and it was a bright recipe!😁
