Instructions
Step 1
STEP 1: Add the 3 Tbsp of oil and 3 Tbsp of seasoning to a silicone bag or ziploc. Squish to mix together.
Step 2
STEP 2: Slice chicken breasts in half lengthwise and then into strips. Add these strips to the marinade in the bag. Marinade for 1 hr and up to 12 hrs.
Step 3
Slice all your peppers into strips. Slice the onion in 1/2 and then laying it flat side down slice across to make long strips. Place in a bag or bowl for later
Step 4
STEP 3: Add 2 tablespoons olive oil to a large cast iron skillet on the preheated grill at medium. Add the marinated chicken breasts and cook for 7-8 minutes then turn. Cook for another 6-8 minutes or until the chicken is cooked thoroughly – a temperature probe can help to check this. Lift off the heat and keep warm
Step 5
STEP 4: Turn the heat up to medium-high and add the rest of the oil to the skillet. Add the peppers and onion, stirring until crispy and browned, usually 6-7 minutes
Step 6
STEP 5: To serve, add chicken to sizzle skillet and then add the peppers and onions, sliced avocado, lime wedge and fresh cilantro
