This is an easy and tasty chicken salad to throw together in a pinch. One thing we loved about this salad is it is not a large salad, just a few servings. Great if you're only cooking for two. The apples and cranberries give a little bit of sweetness while the pecans add a certain nuttiness to balance things out. We love the textures and flavors combination. This is really good stuffed in a pita bread but serve on your favorite bread.
