Instructions
Step 1
Pour the heavy cream in a bowl of stand mixer and start by whipping the cream at medium speed.
Step 2
When the cream begins to thicken, accelerate the speed to medium-high.
Step 3
When it becomes rough. The cream will eventually seperate after 5 minutes, and when the butter and buttermilk are completely seperated save the liquid (buttermilk) and place the butter in a mesh seive.
Step 4
Squeeze the butter tightly with your hands to remove the excess buttermilk, then place the butter in a bowl filled with ice-cold water to further drain it from buttermilk residue.
Step 5
Repeat the process until the water is clear.
Step 6
If you want salted butter, then you can add a pinch of salt before placing it in an air-tight container and storing it in the fridge.
