Super Clean Broccoli Salad with Creamy Almond Dressing

It wasn't my favorite, probably because instead miso I used tahini 🤔 and that changed the flavor.

This is a great salad and is even better the next day.

Added grated carrot (cos I had some in my veg box) and some buckwheat (for a different texture and some protein)

Made this as a lunch to go for work. I only used 1 broccoli head and added some bow tie pasta. I replaced the raisins with dried cranberries. I also used walnuts instead of almonds. Replaced the almond butter with some good ole peanut butter. Surprisingly refreshing, great for a hot summer day.
