One Pan Creamy Parmesan Orzo with Shrimp

A quick and easy recipe with minimal prep and cleanup that all cooks in one pan. Complete with orzo, shrimp, spinach, and a splash of lemon at the end makes this the perfect dinner.

Ingredients
4 servings

2 Tbspbutter

1 lbShrimp
large, uncooked, tail-off

1 tspSalt
regular or seasoned salt, I used the Momofuku spicy seasoned salt

1 tspBlack Pepper
divided

2 tspolive oil

6cloves garlic
minced

2 cupsorzo
uncooked

2 cupsChicken broth
I used water and mixed with roasted chicken low sodium better than bouillon base

¾ cuphalf and half

½ tspcayenne
more or less to taste

1 tspdried basil

1 tsponion powder

5 ozbaby spinach

½ cupParmesan
grated, plus more to serve

0.5lemon Juice
more or less to taste
Instructions
Step 1
Pat shrimp dry. Season generously on both sides with seasoned salt and black pepper.
Step 2
Heat butter in a large pan over medium high heat. Add shrimp and cook for 2-3 minutes a side. Remove from the pan and set aside.
Step 3
Add olive oil to the same pan over medium heat. Add minced garlic and cook for about 1 minute until fragrant. Add uncooked orzo and salt & pepper to taste. Toast for 1-2 minutes.
Step 4
Pour in chicken broth and half & half. Add cayenne, basil, and onion powder. Stir to combine. Bring to a simmer and cover. Stir every few minutes so the orzo doesn't stick to the bottom of the pan. Add more water or chicken broth as needed. Continue until orzo is al dente and most of the liquid is absorbed. About 10-15 minutes.
Step 5
Once the orzo is cooked, stir in parmesan and baby spinach. Combine until the cheese is melted and the spinach wilts.
Step 6
Stir in lemon juice and serve with the shrimp on top and extra lemon and parmesan cheese as desired.
