squeezed or roughly torn for extra release of oils and flavors

¼ cupcilantro stems
cut into 1/2 inch pieces

1 tablespoonsThai Chili Paste
Look for Thai Nam Prik Pao, roasted chilli sambal or sub-red curry paste or Sambal Olek

1 ½ cupsmushrooms

½ cupshallot
sliced long and thin

½ cupfresh tomato
sliced into 1 1/2-inch pieces

2 tablespoonsfish sauce
Adjust with more at the end

2 tablespoonstamarind concentrate
or lime juice
