Creamy Coconut-Lime Salmon

Great coconut milk taste

This was delicious. Felt very coastal.

Used light coconut milk and it did just fine. Served over Food & Wine's lemon brown rice with garlic and thyme. Made the house smell amazing, too!

Very yummy! Would be great over rice.

Might try a coconut cream next time, possibly with a little fish stock.

This tasted really good! My husband who doesnt really like filet fish ate it! I accidentally put a little too much ginger in it but it still tastes great! The peppers were a bit too spicy for me but again hubby loved them! I served this with rice and mixed veggies. Even baby ate it :)
