Instructions

Step 1
Char the outer skin of the eggplant over fire on stove top for about 5 minutes. Watch it carefully and turn it over repeatedly to cook evenly.
Step 2
Cool and then pearl skin off.
Step 3
Rub with 1 tbsp. avocado oil and then cover with seasoning.
Step 4
Heat cast iron to medium high heat and add remaining oil.
Step 5
Cook egg plant until it shrinks and reduce to about half the original size.
Step 6
Turn in down to low and add wine and vegan butter.
Step 7
Simmer and base until wine reduces and thickens.
Step 8
Serve over mashed potatoes and a side of king mushroom.
