Milanese Pork Medallions with Warm Fennel and Escarole Salad

This was absolutely delicious and my kids LOVED it. I used a pork tenderloin that was packaged in a rosemary balsamic marinade which bumped up the flavor even more. The escarole and fennel salad with the lemon really brightened up the flavors and lightened up the dish.
