Instructions
Step 1
Heat sesame oil in a medium saucepan over medium heat. Add the white part of the green onions, along with the garlic and ginger. Sauté for 2–3 minutes, stirring occasionally, until the mixture becomes fragrant.
Step 2
Pour in chicken broth, soy sauce, rice vinegar, and add white pepper. Stir and bring to a boil.
Step 3
Add the wontons to the boiling broth and cook them according to the package instructions. If using Trader Joe's mini wontons, they will be ready in just 2 minutes. Add the baby spinach or your greens of choice to the pot and cook for about 1–2 minutes, or until just wilted.
Step 4
Ladle the soup into bowls and garnish with the green tops of the onions. For a spicy kick, add an optional dollop of sambal oelek on top.
