Step 1
Preheat the oven to 400°F.
Step 2
First, cut the potatoes into medium-size slices.
Step 3
Toss the potatoes in the baking tray with the olive oil, paprika, mutmeg, curry, and basil. Season with salt and pepper.

Bake at 400°F until potatoes are golden brown and look crisp on the outside, about 35-45 minutes, tossing once at the halfway point.
Step 5
When it start to crisp up, remove from the oven, add the Parmesan cheese and place in the oven for a further 3 minutes.
Step 6
Garnish with parsley and serve warm.
