Zucchini Brownies

Used coconut sugar, spelt flour and swapped chocolate chips for chopped crystallised ginger and pecans

These are very chocolatey. I halved the recipe and baked in my 6 cup glass pan and it was a little over-filled so the brownies took about 15 minutes longer to bake and they were much thicker. Although the taste was great, the texture was a little more gooey/spongey than I prefer ([probably due to the smaller pan). Next time I'll use a 8 in pan. Recipe an A+ (texture was my error) I also used coarsely shredded zucchini and it was fine (you couldn't tell)

Usé 250g de azúcar, la próxima vez voy a probar con 220.

This recipe is amazing! My husband and daughter love it. I have a garden and grow lots of zucchini’s so this will be a definite go to for a dessert.
