Instructions
Step 1
Clean the broccoli and boil the tips in salted water until soft. Remove them from the water and set aside.
Step 2
Place the cooked broccoli in a food processor along with Parmesan, garlic, a pinch of salt, and pepper. Blend until smooth and creamy. Keep a few broccoli tips aside for garnish.
Step 3
In a pan, cook the Italian sausage on medium heat without adding oil or butter. Once it becomes crispy, add the Romanesco sauce to the pan. Stir well and keep the heat low.
Step 4
Boil the pasta in salted water according to the package instructions. Choose a short pasta shape that holds the sauce well. While the pasta cooks, proceed with the next steps.
Step 5
Drain the pasta and add it to the pan with the sauce. Toss to coat evenly. Add the reserved broccoli tips and the halved cherry tomatoes. Stir gently, sprinkle with additional Parmesan, and serve immediately.
