Vietnamese Style Eggs 'n' Muffins

Ingredients
1 servings

3eggs
Free range
2Multi-seeded bread slices

3Cherry tomatoes

1spring onion
chopped

1 Tbspolive oil

1 Tbspfish sauce
Instructions
Step 1
Heat oil in a pan & gently fry onions on a low heat until softened.
Step 2
Add in tomatoes for 1-minute to heat up.
Step 3
Whisk eggs and fish sauce in a bowl the add to the pan (can leave out the fish sauce if not feeling brave!)
Step 4
Low heat, scramble the eggs and turn heat off just before eggs start looking rubbery!
Step 5
Toast muffin and add pan contents overtop the muffin.
