There is no bagged or store-bought tortilla on the entire planet that is anywhere near as perfect as these homemade tortillas. Tortillas lose a majority of their texture and flavor after they cool completely and sit. There is a reason some of the best family owned taquerias make all of their tortillas (corn or flour) to order.

Prepping Dough
Step 1
In a large bowl, whisk together the all-purpose flour, salt, and baking powder until thoroughly combined.

While mixing with a spoon, pour in the warm water, immediately followed by the oil. Mix until it comes together as a ball of dough.
Step 3
Turn the dough onto an unfloured surface, and knead for about 3 minutes, or until it comes together as a smooth ball of dough.

Cover with a damp towel, and let rest at room temperature for 30 minutes
Make Tortillas
Step 5
Divide the dough into 6 even pieces for burrito-sized tortillas or up to 12 pieces for taco-sized. Roll each piece into a ball.
Step 6
On a lightly floured surface, gently roll each ball of dough to form a 10- to 12-inch circle.
Step 7
Preheat a 12-inch cast-iron skillet over medium-high heat until very hot. Working 1 tortilla at a time, gently lay the tortilla in the skillet and cook for 15 to 30 seconds, or until the bottom becomes lightly charred. Flip and cook until lightly charred on the other side.
Step 8
Remove from the pan and place between a folded towel until ready to serve. Repeat to cook the remaining tortillas. Enjoy!
