Instructions
Step 1
Wash and dry produce. Halve, peel, and dice onion. Finely chop jalapeno, removing ribs and seeds. Peel and finely chop garlic.
Step 2
Heat a large drizzle of oil in a large pot over medium-high heat. Add onion and half of jalapeno. Cook stirring until softened 5-7 minutes.
Step 3
Add Chicken to pot and season generously with salt and pepper. Cook stirring until browned 4-5 minutes. Add garlic and Southwest spice cook stirring untill fragrant, 30-60 seconds
Step 4
Stir tomato paste into pot with chicken mixture. Cook stirring until combined and slightly darkened 1-2 minutes. Stir in 2 Tbsp ketchup, beans and their liquid, stock concentrate and 1/2 a cup of water bring to a simmer and cook until mixture is thickened and chicken is cooked through, 8-10 minutes. Turn off heat. Taste and season with salt and pepper.
Step 5
Divide between bowls, top with sour cream and as much Jalapeno as desired.
