Instructions

Step 1
Cook both kinds of rice according to directions on the package

Grill and slice the chicken
Step 3
Add the cauliflower rice to a greased frying pan. Saute until tender and warm. Add the jasmine rice, chili-lime seasoning, salt, cumin, paprika and garlic powder. Stir until well combined and heated through. Weigh the mixture and divide by the number of servings.
Step 4
Place 1/2 cup chopped romaine lettuce in the bottom of a bowl and then layer one serving of the rice mixture, 2 oz grilled chicken, 1/4 cup black beans, 2 Tbsp corn, 2 Tbsp shredded cheese, 40 g avocado, 1 Tbsp Greek yogurt, 2 Tbsp salsa, green onions and lime juice.
