1 cupdry quinoa

2 cupswater

1lemon juiced

¼ cupolive oil

1 tablespoonred wine vinegar

1 teaspoongarlic powder

1 teaspoononion powder

2 teaspoonsdried herbs
basil, parsley, or dill

salt
to taste

pepper
to taste

1 cupfeta
crumbled, + 2 tablespoons for dressing

1 cupcherry tomatoes
quartered

1 cupcucumber
diced

1 cupgreen olives
chopped
Instructions
Step 1
1. In a saucepan- mix together quinoa and water, bring to a boil then cover and let simmer for 10-15 minutes. Fluff with fork.
Step 2
2. In a large bowl- whisk together lemon juice, olive oil, vinegar, seasonings and 2 tablespoons of feta.
Step 3
3. Add in quinoa, rest of feta, tomatoes, cucumber and olives. Mix well.
Step 4
4. Can be served right away or stored in the fridge for up to 5 days.
