Sweet Potato Black Bean Enchiladas

Instructions

Step 1
Pour oil in skillet and heat over medium high heat.
Step 2
Add onions and garlic, cooking until onions are translucent and garlic begins to brown (about 3-4 minutes).
Step 3
Add sweet potato cubes, cover skillet and allow to cook for 3-4 minutes.
Step 4
Add cumin, chili powder and salt and recover, allowing to cook for 3-4 more minutes.
Step 5
Add black beans and corn.
Step 6
Cover again and cook until potatoes are soft, about 10 more minutes.
Step 7
Remove from heat and allow to cool.
Step 8
Warm tortillas in microwave. Grease baking pan and add 1 c salsa verde to the bottom.
Step 9
Fill each tortilla with 0.5 c of filling and some cheese. Roll the tortilla and place seam down on the pan.
Step 10
Pour the remaining salsa verde on top of the enchiladas and top with remaining cheese.
Step 11
Bake at 350 degrees for 20 minutes.
