Spicy Cashew Dressing

Salads like these can seem intimidating with the amount of work that you may THINK you have to do. But itās all in the prep- like before a dateā¦ or an interview if thatās your thingš«£
š«°š½Keeping crispy rice in your fridge lije croutons, oyster mushrooms that have been seared for some of that meaty texture, and a dressing thatās both decadent and silky in your mouth is key to making this the ideal meal to indulge in throughout the week.
Hereās how:
Spicy Cashew Dressing
* 1 cup soaked cashew
* 4-5 tbsp cashew soaking liquid
* 3 tbsp sriracha
* 1-2 garlic cloves
* 1 tbsp soy sauce
* 1 tbsp honey
* 2 tbsp rice vinegar
* 1/8 tsp white pepper
Blackened mushrooms
* 1/2 tbsp smoked paprike
* 1/2 tsp cumin
* 1/2 tsp cayenne pepper
* 1/2 tsp cinnamon
* 1/4 tsp white pepper
* Black pepper/salt to taste
* 2 tbsp neutral flavored oil
* 1 tbsp maple syrup
* 8 oz oyster mushrooms
Crispy Rice
* 2 cup day-old rice
* 2 tbsp sesame oil (sub olive oil)
* 2 tbsp rice vinegar
Assembly:
* 4-6 cups Arugula
* 1 cup shredded. arrots
* 1 cup shredded cabbage
* Basil, like, chili oil , to garnish
Directions:
1. To make the dressing, soak the cashews and reserved 1/2 cup of the liquid. Blend all of the dressing ingredients together until smooth. Store in a container
2. To make the Blackened mushrooms, mix all of the marinade ingredients together in a bowl. Toss with mushrooms. Heat a skillet w/ 2 tbsp oil and sear on both sides over medium heat. Drain on paper lined plate
3. To make crispy rice: In the same skillet used to sear mushrooms, cook the rice with sesame oil and vinegar. Flatten the rice along the bottom of the pan and cook until browned and golden on both sides, about 5 mins
4. To assemble: On a bed of arugula, add the carrots, cabbage, mushrooms, crispy rice, and basil. Toss with dressing and chili oil. Serve with bread
