Basil and Olive Oil Potatoes

Instructions

Step 1
In a large pot, cook potatoes, covered, in boiling salted water 10 minutes or until tender; drain well.
Step 2
Meanwhile, for dressing, in a small saucepan combine oil, 1/2 cup of the basil, and the garlic; cook over medium-low heat for 5 minutes. Remove basil from oil and discard.
Step 3
In a blender, combine garlic oil and white wine vinegar, lemon juice, mayonnaise, salt, and black pepper. Cover and blend until smooth. Transfer potatoes to a serving bowl. Pour dressing over potatoes and gently toss to coat. Cover until serving.
