Instructions

Step 1
In a covered saucepan sauté onions and garlic in oil for 10 minutes, stirring frequently until lightly browned.
Step 2
Wash kale and slice crosswise into 1 inch thick slices.
Step 3
Add pineapple and juice to the onions and bring to a simmer.
Step 4
Stir in kale and cover and simmer for 5 minutes until just tender.
Step 5
Mix in peanut butter, Tabasco and cilantro and simmer for 5 minutes. Add salt or soy sauce to taste and serve garnished with crushed peanuts and scallions.
Step 6
Serve on rice, millet, couscous or other grain.
