For the whipped goat cheese
Instructions
Step 1
Blanch the brussells in a large pot of salted, boiling water for 5 mins. Immediately place in an ice bath to stop the cooking (about 5 mins).
Step 2
Trim off the ends on the brussells and halve them. Toss with salt pepper and olive oil and roast at 450 for 15 to 20 minutes or until crispy.
Step 3
While the brussells are roasting, melt the honey in the microwave and mix with the vinegar. Set aside
Step 4
In a high powered blender or food processor, add the goat cheese, cream cheese, lemon zest and juice, and salt and pepper. Blend until smooth and creamy.
Step 5
Remove Brussels from oven and toss in a bowl with the vinegar and honey mixture. Serve immediately with dollops of the whipped goat cheese.
