1 tspdry garlic
1 tspsweet paprika
2 pcsDry red pepper
2 ½ cuplong grain basmati rice
~20 min cook time, or brown rice ~30 min cook time
½ cupraisins
½ cupdried cherries
2 tablespoonsAvocado oil
or Olive, for frying
5 tablespoonsButter
3Lavash bread
Instructions
Step 1
Step#1: Dice the carrots, chop the onions, and give that garlic a nice haircut (cut the top off). Wash the rice thoroughly.
Step 2
Step#2: Turn on your Instant Pot's Sauté mode and add oil. Now it's time to sauté the meat for about 6 minutes. Remove the meat and sauté the onion until it's as translucent as Casper the Friendly Ghost. Then toss in carrots, meat, spices, bay leaves, store bought spices, salt, red and black pepper. Cook for around 5 minutes. Optional: sprinkle in some raisins and dried cherries!
Step 3
Step#3: Plop the rice on top of the mix, but no stirring yet! Push the garlic halves into the rice. Now pour 3 cups of hot water over everything, making sure the water slightly covers the rice. To spread the flavor party, poke some holes in the rice with a spatula handle. Set the pressure cooker to manual for 20 minutes and do a manual pressure release. If you're using brown rice, add an extra 10 minutes and let the pressure naturally release for 10 minutes. Remove the garlic heads but leave a few cloves for that extra garlic kick!
Step 4
Step#4: Time for the grand finale! Grease the inside of a large dutch oven with melted butter. Then, brush the lavash bread with melted butter and layer it inside the dutch oven, sticking out the sides. Place the rice pilaf inside and wrap the lavash bread on top. Brush on the remaining butter and cover with foil or a lid. Pop it in the oven on high for around 15 minutes.
Step 5
Voila! When it's done, unleash your inner acrobat and flip the dutch oven onto a large plate or dish. Maybe call a friend for backup—it's heavy! Serve it warm and slice it up like an apple pie, but with rice pilaf goodness. Brace yourself for the impressed reactions from your family—they'll be blown away in under 30 minutes!
