Cheese Crusted Lasagna Burrito

Layers of tortilla, bolognese, and cheese rolled up into a burrito, coated with a cheese crust. Makes 1 burrito but will serve 4 people with sides!

Instructions

The Bolognese

Step 1
Finely dice the onion and carrot and frying medium heat for 3-5 minutes.
Step 2
Turn the heat up and add the beef mince and fry til brown, breaking up into small bits.
Step 3
Finely dice the mushrooms and add these in and fry for 2 minutes.
Step 4
Add the tomato purée and sauté for 2 minutes before adding the stock pot and boiling water.
Step 5
Simmer for half an hour or until reaches thick consistency, then leave aside to cool slightly

The Lasagna Burrito

Step 6
Grate the cheddar and parmesan
Step 7
Lay down a wrap, bolognese, parmesan, and cheddar, leaving a rim around the outside, then repeat 2 more times.
Step 8
Fold the sides over then roll up into a log
Step 9
Lay seam side down on a grill pan on medium heat and then lay all over to grill the other sides then remove

The Cheese Crust

Step 10
Heat a large non stick frying pan on a medium heat
Step 11
Grate the parmesan, cheddar, and mozzarella
Step 12
Lay down the parmesan, then cheddar, then mozzarella, and cook til the bottom browns and separates from the pan
Step 13
Lay down the burrito and fold the sides of the cheese around the burrito
Step 14
Lay out into a board and allow to slightly cool before cutting open and topping with fresh parmesan
