Instructions
Step 1
Add cubed potatoes, celery, onion, carrot, garlic and parsley to large soup pot. Add just enough chicken broth that all the ingredients are submerged.

Step 2
Once everything is cooked through remove from heat and let stand for a few minutes. Use an immersion blender or transfer to blender and slowly pulse the soup into a creamy light purée.
