Ingredients

1avocado
halved and pitted
2eggs
medium
salt
pepper
5cherry tomatoes
diced
2 tbspscrushed red bell pepper
1 tspcilantro
Instructions
Step 1
Preheat oven to 220 celsius.
Step 2

Use a spoon to scoop out some of the flesh of the avocado (scoop wide, not deep, otherwise egg will take longer to cook).
Step 3

Crack a medium egg and spoon the yolk gently into the avocado, making sure the yolk stays intact. Repeat for the other half of the avocado.
Step 4

Fill the holes with any remaining egg white, making sure not to overflow. Season with salt and pepper.
Step 5

Place avocados on top of an upside-down muffin tin, and bake until egg whites have set, but yolks are still runny (about 15 minutes).
Step 6

Top with tomatoes, bell pepper, and cilantro, and enjoy immediately!
