This potato salad is no side dish. This is the main course :)) . It has potatoes and eggs peas and sausage so its delicious and super satisfying and great enjoyed cold

Instructions
Step 1
Peel potatoes then dice them ( they will cook faster and are cut for later ) then and steam or cook until fork tender then set them aside to cool down
Step 2
Hard boil the eggs then drop into ice water . Once cool dice them and set them aside

Step 3
Refresh frozen peas in a bowl of warn water then drain . Dice the chicken sausage you can also use Ham or spam if thats all you have . Slice the scallions chop the dill dice the cucumber and set these aside




Step 4
For the dressing Mix buttermilk ( sub kefir if you prefer as its also very healthy ) mayonnaise pickle juice and agave syrup in a bowl and season with salt and pepper

Step 5
Add all the ingredients into a large salad bowl then season with salt and pepper and add in the dressing . Once mixed serve and enjoy
