Step 1
1Heat a griddle over medium-high heat. Divide sausage into 8 portions and place them in mounds on the tortillas. Spread sausage thinly over one side of the tortilla. Spray preheated griddle with cooking spray. Press tortillas, meat side down, on hot griddle. Cook until sausage is browned. This only took a few minutes since the meat is spread thin. Flip each smash taco. When tortilla has lightly browned, remove from griddle and keep warm. Scrambled eggs on hot griddle. Top the smash tacos with egg and cheese. Serve plain or with salsa or hot sauce. Enjoy!
