Breakfast tacos
I love when a plan comes together! Breakfast tacos filled with all the things: bacon, avocado, onion, cheesy eggs, more cheese, and pico de gallo. Makes 5 tacos.

Instructions
Step 1
In large skillet over medium heat cook bacon until crispy. Set aside.
Step 2
Add sliced onion to same skillet. Add 1-2 T oil if cooked with turkey bacon. Cook until browned stirring somewhat often to prevent burning. Set aside.
Step 3
Add tortillas to skillet and cook 1-2 min per side until browned in spots and warmed through. Set aside.
Step 4
Add 1 T of butter or oil to skillet then add whisked eggs. Top with half of the cheese, salt and pepper to taste. Use spatula to scramble then place onto serving plate.
Step 5
Top tortillas with bacon, eggs, avocado, onions, more cheese, and pico.
