Ingredients
3 servings
4carrots
chopped into chunks
1cauliflower
chopped into florets
1red onion
chopped into wedges
1 punnetcherry tomatoes
halved
8garlic cloves
400gchickpeas
drained
1 handfuldried apricots
halved
1 blockhalloumi
sliced
For dressing
3 tspharissa paste
1 ½ tspground coriander
1 ½ tspground cinnamon
1 ½ tspground cumin
0.5lemon
juiced
honey
olive oil

Instructions
Step 1
Preheat oven to 200°C. Prepare ingredients
Step 2
Mix dressing and stir with cauliflower, carrots, onion, tomatoes and garlic. Season with salt and pepper. Roast for 25 minutes (use the big roasting tin)
Step 3
Stir in chickpeas and apricots, then lay halloumi on top. Roast for a further 20 minutes
Step 4
Mix couscous ingredients together, cover and leave to stand for at least 10 minutes. Fluff with a fork once cooked
Step 5
Serve immediately, or mix into couscous and eat cold as a salad
