Sausage, barley, and spinach stew

Italian sausage lens, a whole lot of flavor to the simple stew, and you can choose a spicy or mild version, depending on your preference. Be sure to use a quick, cooking barley, which cooks in about 10 to 12 minutes, rather than pearled barley, which takes closer to an hour.

Step 1
Cook the sausage and onions over medium heat, stirring frequently and breaking the meat up until the onions are soft and the sausages browned, about eight minutes. Scoop out any excess fat, but leave about 2 tablespoons.
Step 2
Add the water tomatoes and barley to the pot and bring to a boil. Simmer over medium, low heat, uncovered, for 15 minutes, until the barley is tender and the broth a second.
Step 3
Stirring the spinach and cook until it will. It’s about one minute more. Add salt and pepper to taste and serve hot.
