Instructions

Step 1
Using peeler peel the carrots, zuchinni and place in bowl
Step 2
Garlic press to mince the garlic cloves set aside
Step 3
Wash and peel the branches of bok choy off, discard the stem
Step 4
Using vitamix pulse the rings tomatoes until chunky smooth
Step 5
Large skillet, medium heat with olive oil
Step 6
When hot, add garlic and let it brown

Add tomatoes from blender

Season with salt, onion powder and fresh basil for 4 minutes, adjust temperature accordingly

Once starting to stay at light bubble, add bok choy, spinach, and the peeled carrots and zuchinni

Cover for a few minutes, lower heat to medium to medium low

Uncover and start stirring and mixing the pan ingredients around, add salt as needed

When pak choy starting to soften, reduce heat and let sit and mix for a few minutes

When zuchinni starts to turn from white to a cooked yellow, turn heat off and let sit

Serve hot :) the carrot and zuchiin "noodles" should still have a nice crunch :)
