Instructions
Step 1
Preheat oven to 350 degrees. Cook noodles according to package directions and cook chicken if not already cooked.
Step 2
Melt butter in skillet. Add mushrooms and onions. Cook and stir until onions are tender. Add chicken broth and 1/2 cup milk. Pour the remaining 1/2 cup of milk into a jar with lid and add flour, nutmeg, salt, and pepper. Shake well. Slowly stir mixture into skillet. Bring to a boil for 1 minute.
Step 3
Reduce heat and stir in pimiento and 2 tbsp parmesan. Stir in sour cream. Add chicken and noodles.
Step 4
Spray 1.5 quart casserole dish with nonstick spray. Spread mixture into dish. Cover with remaining parmesan. Bake 30-35 minutes.
