Instructions
Step 1
1. Dice Veggies, separate whites and greens of green onions

2. Heat oil over medium-high heat and add onion, bell pepper and scallion whites. Cook 2-3 mins and season with salt & pepper. Add garlic and sausage and cook, breaking up meat into pieces till cooked

3. Add tomato paste and oregano to pot with veggies and sausage; stir to coat 30- 60 seconds
Step 4
4. Stir 4 C water, chicken stock, and 3 tsp into pot. Bring to simmer then reduce heat to medium low. Cook stirring occasionally until veggies have softened and soup has thickened slightly, 8-10 mins (the soup should be gently bubbling)
Step 5
5. Stir beans and their liquid into pot with soup; cook until beans are warmed through, 2 minutes more. Reduce heat to low, then stir in cream cheese.Turn off heat.
