Instructions

Step 1
Heat a pot and add oil.
Step 2
Once the oil is hot, add the whole spices and stir for about a minute. Then, add the curry leaves and green chilies.
Step 3
After approximately 30 seconds, add the onions and sauté until they become translucent.
Step 4
Add the garlic and ginger to the pot.
Step 5
Continue sautéing until the onions turn golden brown.
Step 6
Reduce the heat to low and add the ground spices and salt, making sure they don't burn.

Add 2-3 tablespoons of water to help cook the spices.

Once the oil separates, add the lamb and mix it in with the spices. Sauté for about 10 minutes, stirring frequently.

Cover the pot with a lid and simmer on low heat for 20 minutes.

Blend the tomatoes in a blender, then add them to the pot.

Stir and cook for two minutes, bringing it to a boil. Cover the pot and simmer on medium-low heat for 10 minutes.

Add the raw potatoes to the pot, stir them into the curry, and cook for 5 minutes. Then, add boiling water.

Bring the mixture to a rolling boil and cover the pot on medium-low heat for 20 to 25 minutes, or until the potatoes are soft and the gravy reaches your desired texture.
Step 14
Prepare the bread loaf by cutting a quarter or half of it and hollowing out the center, while keeping the loaf intact. Set aside the cut loaf and bread center.
Step 15
Once the curry is cooked, finish it off by adding two pinches of garam masala and fresh coriander.
Step 16
Serve the curry inside the hollowed out bread pieces, and garnish with more fresh coriander.
