Instructions

Step 1
Preheat oven to 200°C
Step 2
Finely chop the shallot and garlic.
Step 3
Prepare stock by dissolving the stock cube/paste in 500ml boiling water
Step 4
Heat oil in a large pan and then fry the shallot until softened.
Step 5
Add in garlic and tomato puree and fry for a further 1 min.
Step 6
Add the rice and coat in oil until it's transparent.
Step 7
Add the veggie stock and tomatoes into the pan and bring to the boil.
Step 8
Cover with foil or a lid, put in the oven and cook for 20-25 minutes.
Step 9
Add grated cheese and sun-dried tomato paste and stir through.
Step 10
Serve and enjoy
